Sweet Mung Bean Soup
(lu dou tang) A refreshing summer snack or dessert. It is very easy to make.
Ingredients
1/2 cup of mung beans
6 cups of water
5 tablespoons sugar or to taste
Method
1. Soak the beans overnight, or least for 4 hours, in plenty of water.
2. Place in a large pot, add the water.
3. Bring to a boil, add sugar , stir, and simmer for 1 hour.
4. Let cool, then refrigerate for 1 hour, and serve.
Notes
Mung beans, according to Chinese, have a 'cooling' effect on the body, so this is a very popular snack in summer. Read about the medicinal properties of mung beans in Chinese System of Food Cures. The dish can also be served hot.
