Three Cup Chicken

Three Cup Chicken

(san bei ji) The three cups refer to one each of sesame oil, rice wine and soy sauce.

Ingredients
1 small chicken, cleaned and chopped into small chunks
6 cloves garlic, crushed
10 slices ginger
1 cup sesame oil
1 cup rice wine
1 cup soy sauce
4 stalks fresh basil

Method

1. Using a little of the sesame oil, brown the chicken in a pot.
2. Add garlic and ginger towards the end of the browning.
3. Add the rest of the sesame oil, rice wine and soy sauce. Bring to a boil.
4. Cover and simmer for 20 minutes.
5. Add the basil, stalks and all, a couple minutes before cooking is finished.

Notes
This is a simple but pungent, salty dish that needs to be eaten with rice and preferably other dishes. Don't skimp on the garlic and ginger. In Taiwan basil is always added. Don't simmer longer than 20 minutes or the chicken will be dry and overly salty.
